Great new Flavor culture

I really love this culture for many reason . Like that it comes in larger size than most cultures. I have used it for Tuscan Salami as well as Genoa . Flavor profile is as described more old world than American tang style salami. Fermented both salami to 4.96 PH prior to drying chamber and real happy with end product and flavor . 2 Guys & cooler website great info on using this culture.
